All hail the avocado! With a twist of lime and a kick of chilli this little green member of the pear family is fast becoming a brunch favourite.
- A baguette, sliced
- One ripe avocado, peeled and stone carefully removed
- One lime
- 2 tsp chill flakes
- Extra fresh chilli
- Salt and pepper to season
Simply mash the avocado and adjust the lime and chilli to suit your taste. Slather over a toasted baguette.

For those that love the sweet and salty combo, this is for you. In fact if you love breakfast in general, I can’t imagine you turning this one down. Think sweet, French toast topped with crispy smoked bacon and a dusting of cinnamon and icing sugar for good measure. Veggies could enjoy this one without the bacon – it’ll still be just as tasty!
- Four slices of bread
- Two free range eggs
- 100ml milk
- 1 tsp cinnamon, plus extra for dusting
- Six rashers of streaky smoked bacon
- 2 tsp icing sugar
Mix together the eggs, milk and cinnamon. Dip your bread in the mix and cook on a grill or griddle for 5 minutes until golden. Meanwhile cook your bacon. Serve together with cinnamon sugar!
